Though compact in size, the maximum capacity of the press is a mould/follower with a diameter of about 8-1/2" and 7" height. Base measures about 11" x 8" and the rods are 9" center to center. Zinc-coated threaded rods are 12" long.
Pressure is applied by tightening the star knobs that tension the included stainless steel springs that in turn push against the bottom bar and against the mould follower.
The press has been calibrated using a postal scale to insure that the pressures are accurate. A step pressure gauge is included for you to set the pressure called for in the recipe. When the springs are fully closed, the press exerts 50 lbs of pressure on the mould. If your mould is taller than your follower disk, then just add a small can between the bottom arm and the follower (see the pictures).
As with any spring-type press, you should expect to have to re-tighten the springs during initial pressing. Turning the mold 1/4 way after the first pressing will also help avoid making "crooked" cheeses!
